Oatmeal Buttermilk Pancakes

2 cups old fashioned oats 1/2 cup all-purpose flour 3 TBSP sugar 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 2 1/2 cups buttermilk 2 large eggs 1/4 cup unsalted butter, melted 1 tsp vanilla extract additional melted butter for brushing skillet fresh or frozen blueberries (optional) Combine first 6 ingredients (I like using a food processor and pulverize the oats first). Whisk buttermilk, eggs, butter and vanilla in medium bowl. Add to dry ingredients, whisk until well blended with a few lumps remaining. Add some blueberries if desired. Let batter stand to thicken 2 hours or in the refrigerator over night. When pulverizing the oats at first you can just use immediately, but for plumper oats letting it sit is a good idea. I've tried both ways and like them both. Delicious way to get my kids eating oatmeal. I got this recipe from the Red Rock Ranch collection and added a few ideas that Amy and I have tried. Anne
