1/2 cup shortening
1 1/2 cup sugar
1 egg
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 tsp baking powder
mix sugar and shortening. add egg and vanilla. combine all dry ingredients with wet. add below ingredients.
1 cup pumpkin
1/2 cup nuts
2/3 pkg. chocolate chips
bake at 350 degrees for 10-12 minutes.

Yummy Choco Chip Cookies

3/4 cup white sugar
2 eggs
1 tbsp hot water
1 tsp vanilla
--cream together
1 1/2 cup flour
2 cups oats
1 tsp soda
1 tsp salt
1 pkg choco chips
(I add nuts)
-mix well and cook in 400 degree oven for 8 minutes

Mom's Valentines Cookies
1/2 cup shortening
1 cup sugar
2 eggs
3 cups flour (or more)
4 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1/2 cup sour milk or sour cream
1 tsp. vanilla
Cream shortening and sugar. Add eggs and beat well. Mix in vanilla. Add all dry ingredients and milk or sour cream alternately. Roll dough 1/4 inch thick. Cut with heart cookie cutters. Bake @375 degrees for 6 to 8 minutes. Cool, frost (with cream cheese frosting of course) and decorate.

Coconut bars
1 1/2 C of flour
1 1/2 C oatmeal
1/3 t salt
3/4 C of sugar
1 C melted margarine or butter (I prefer butter)
1 C chocolate chip cookies
1/2 cup of choped nuts
3/4 C coconut flakes
1 can of condensed milk
Mix the first 5 ingredients together. Press 1/2 of them in a 9x13 pan and bake it for 10 minutes at 350.
Mix the next three ingredients. After 10 minutes has passed take pan out of the oven and put the mix with the nuts and chocolate chip cookies and the rest of the dough mixture. Pour the condensed milk and bake it for 15 more minutes at 350 degrees. Let it cool and cut it. Enjoy.

Oatmeal Cookies
3/4 C butter, softened
1 C packed brown sugar
1/2 C granulated sugar
1 tsp baking powder
1 tsp baking soda
1 tsp baking soda
1/2 tsp ground cinnamon
2 eggs
1 tsp vanilla
1 3/4 C flour
2 C rolled oats
1/2 C nuts
In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugars, baking powder, baking soda and cinnamon. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in rolled oats and nuts.
Drop dough on cookie sheet. Bake at 375 for about 10 minutes or until edges are golden. Cool on cookie sheet.
*Can add chocolate chips or craisins or raisins.

Lemonade Cookies
1 C butter
1 C sugar
2 eggs
1 tsp baking soda
1 6 oz can frozen lemonade, thawed
3 C flour
Cream butter and sugar. Add eggs till light and fluffy. (can add a little yellow food coloring to make more yellow. Mix flour and soda and add to creamed mixture alternating with 1/2 C lemonade concentrate. Drop dough from teaspoon on to ungreased cookie sheet. Bake at 350 for 10 minutes. Brush hot cookies lightly with remaining lemonade concentrate. Sprinkle with sugar. 4 dozen.
No Bake Cookies
Boil together for one minute:
1 cube butter or margarine
2 C sugar
1/2 C milk
Then add a dash of salt, 5 T cocoa and 1 tsp vanilla. Stir in 3 C oatmeal. Can add nuts or peanut butter. Drop by spoonful on waxed paper. Cool.
