PUMPKIN: place entire carved pumpkin, lid on, on a cookie sheet in 200 degree oven. bake for 2-3 hours checking periodically with a fork until soft. let cool. when done take out and cut up 2-3 square inch pieces. peel off pumpkin skin. blend small amounts in blender and place in a large bowl. refrigerate. take out amounts that you need for recipe.
PIE: (cook for 10 minutes in a 450 degree oven)
1 1/2 cups of cooked pumpkin
3/4 cup brown or white sugar
1/2 tsp salt
1/2 tsp ginger (or allspice)
1/4 tsp nutmeg (or allspice)
1 tsp cinnamon
combine all above ingredients. mix well. add in below ingredients.
3 slightly beaten eggs
1 1/4 cup milk
1 6 oz can evaporated milk (omit if pumkin is runny/soft)
1 9 inch pastry shell, uncooked
pull oven rack out. place small cookie sheet with a small amount of water in it on rack with pie shell in it. pour pumpkin mixture into pie shell. bake for 10 minutes at 450.
