Mom's Granola

10 C old-fashioned rolled oats
1 C wheat germ
1/2 lb shredded coconut (i don't always)
2 C raw sunflower seeds
1 C sesame seeds
1/2 C chia seeds
3 C chopped almonds, pecans, walnuts, macadamias or any combination of nuts

In a large bowl (or two) combine all above ingredients.

1 1/2 C brown sugar, firmly packed
1 1/2 C water
1 1/2 C vegetable oil
3/4 C honey (this is changed from 1/2 C honey and 1/2 C molasses)
1 1/2 tsp salt
2 tsp cinnamon
3 tsp vanilla


In a large saucepan combine all above ingredients. Heat until sugar is dissolved but do not boil. Pour syrup over dry ingredients and stir until well coated. Spread onto 5 13X9 baking pans or cookie sheets with sides. Bake 20 to 30 minutes at 300 degrees- stirring occasionally. Bake longer for crunchier cereal (I set the timer for 9 minutes, stir and repeat until I feel it is done). Add raisins/craisins if desired. Put in airtight containers. store in a cool dry place. Use within 6 months. Makes about 20 cups.

thanks for the recipe. i need to get busy and make it for my husband who is currently suffering from high cholesterol and eating oatmeal like crazy.
