Mom's Potato Rolls

These are my favorite rolls to make and eat. I get a lot of compliments on them. It's time to post the recipe for all to enjoy. Thanks Mom! Laura


1 TBS dry yeast
1/4 cup warm water
1 tsp sugar
1/2 cup hot mashed potatoes
(I use instant most of the time)
1/4 cup shortening
1/4 cup sugar
1 1/2 tsp salt
1 cup milk, scalded
1 egg, beaten
4 to 5 cups sifted flour

Soften dry yeast in warm water with 1 tsp sugar. Combine potatoes, shortening, sugar, salt, and hot milk in large mixing bowl. Cool to lukewarm. Add yeast and egg to mixture. Mix in 2 cups flour, beat well. Stir in remaining flour and mix in mixer for 8 minutes or knead on floured surface for 8 minutes.

Place dough in greased bowl, cover and let rise 1 hour or until doubled (I put it in a slightly warmed oven). Punch down, cover, and let rise 10 more minutes. Divide dough in half and roll each half into a circle. Cut pie shaped into 16 slices. Roll each slice from wide side to point. Place on greased cookie sheets, cover and let rise for 1 hour. Bake in 400 degree oven 8 to 10 minutes. Rub top of hot rolls with butter. Eat right away. Makes 32 rolls. Yummy!
