Mom's Clam Chowder

2 cups - potatoes
1 cup - celery
1/4 cup - onion
2 cups - water

Peel potatoes and chop everything. Boil in water for 20 minutes.

1/2 cup - butter
1/2 cup - flour
1 - 12oz. can evaporated milk
2 1/2 cups - water
2 cans - clams
(Laura only uses 1 can and drains the clam juice into the vegetable mixture)

Melt butter in large sauce pan on medium heat. Add flour, mix until combined. Slowly whisk in milk then water. Cook until thick. Add to vegetable mixture. Salt and pepper to taste.
