Rene's Spaghetti

Make pasta in boiling water with piece of onion and a piece of garlic and salt.
While the noodles are boiling blend:
two tomatoes diced
one clove of garlic
1/8 of onion chopped up
add a little water (make sure not to pasty or not to watery- its like soup)
In large pot melt 2-3 T butter. Add spaghetti and sauce and fold together. Let boil with pasta for a few minutes then add salt and Maggie to taste. Leave lid off to let it evaporate. Then add sour cream (about 1/3- 1/4 a tub) and Italian seasoning. Turn down heat and cover stirring occasionally.

Baked Macaroni & Cheese

16 ounces cooked macaroni
4 tablespoons butter
4 tablespoons flour
1 cup milk
1 cup cream (or evaporated milk)
1/2 teaspoon salt
fresh ground black pepper, to taste
2 cups cheddar cheese, shredded good quality
1/2 cup breadcrumbs, buttered

Preheat oven to 400°F. Cook and drain macaroni according to package directions; set aside. In a large saucepan melt butter. Add flour mixed with salt and pepper, using a whisk to stir until well blended. Pour milk and cream in gradually; stirring constantly. Bring to boiling point and boil 2 minutes (stirring constantly). Reduce heat and cook (stirring constantly) 10 minutes. Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts. Turn off flame. Add macaroni to the saucepan and toss to coat with the cheese sauce. Transfer macaroni to a buttered baking dish. Sprinkle with breadcrumbs.
Bake 20 minutes until the top is golden brown.

Creamy Chicken Lasagna para Juano

3 skinless, boneless chicken breast halves
6 uncooked lasagna noodles
1 cube chicken bouillon
1/4 C hot water
1 (8 oz pkg cream cheese
2 C shredded mozzarella cheese
1 (26 oz) jar spaghetti sauce

Bring a large pot of lightly salted water to a boil. Cook lasagna noodles for 10-12 minutes or until dente. Drain, rinse with cold water and set aside
Meanwhile, place the chicken in a saucepan with enough water to cover, and bring to a boil. Cook for 20 minutes, or until no longer pink and juices run clear. Remove from saucepan, and shred.
Preheat oven to 350 degrees F (175 C). Disolve the bouillon cube in hot water. In a large bowl, mix the chicken with the bouillon, cream cheese, and 1 cup mozzarella cheese.
Spread 1/3 of spaghetti sauce in the bottom of a 9x13 inch baking dish. Cover with the chicken mixture, and top with 3 lasagna noodles; repeat. Top with remaining sauce, and sprinkle with remaining mozzarella cheese.
Bake for 45 minutes.

Cheesy Penne in the Crock Pot

1 lb. Italian sausage
15 oz can of tomato sauce
14 oz can of diced tomatoes
1 tsp dried oregano
1 clove garlic minced
1/4 cup olive oil
fresh mushrooms
2 tsp sugar
3/4 lb penne pasta
1 cup shredded mozzarella

Cook and drain sausage (I like to use smoked sausage). Put into Crock pot, add tomato sauce, diced tomatoes, oregano, garlic, olive oil, mushrooms, and sugar. Mix well. Cook on low for 6-7 hours. Boil penne pasta in pot of water 4-5 minutes less than package directions. Drain and put into Crock pot. Stir in pasta, and top with mozzarella cheese. Cook for 30 minutes more.

German Spaetzle and Meatballs

Meatballs:

Mix lightly:
1 lb ground beef
1/4 C dry bread crumbs
1 tsp salt
dash of pepper
1/2 tsp poultry seasoning
1/4 C milk
1 egg
Shape into about 24 1/2 inch balls. Brown slowly in oil on all sides. Add:
1 can beef broth
1 3 oz can mushrooms
1/2 C chopped onion
Simmer covered for 30 minutes. Blend:
1 C dairy sour cream
1 T flour
1/2 to 1 tsp caraway seed
Stir into broth. Cook and stir until mixture thickens.

Spaetzle:
Mix together:
2 C flour
1 tsp salt
Add:
2 slightly beaten eggs
3/4 C milk
Mix well place mixture in Spaetzle maker. Hold over large pan of rapidly boiling salted water. Press mixture into water and cook 5 minutes, stirring often. Drain. Sprinkle with mixture of 1/4 C dried bread crumbs and 2 T melted margarine. Can add seasoning salt.

Mom's Lasagne

1 pkg Laury's spaghetti sauce mix (or 3 Tbsp)
1 lb. sausage
1 garlic clove chopped
3/4 T basil
1 carton cottage cheese (1 lb)
handful of chopped parsley
noodles cooked according to instruction (6)
1 lb hamburger
2 15 oz cans tomato sauce
3/4 T oregano
1 can mushrooms and juice
grated mozzarella cheese

Brown meat and sausage together. Add tomato sauce, Laury's and mushrooms and cook 20 mins. While noodles are cooking shred mozzarella and add cottage cheese. Add parsley and stir. Put a little sauce in 9x13 pan. Then layer noodles, then cheese stuff, then sauce, noodles, cheese and sauce. Cook covered about 45 min at 350.

Spaghetti Casserole

1 12 oz pkg long spaghetti
1 1/2 lb hamburger
onion, chopped
1 tsp garlic salt
1 tsp salt
1/2 C ketchup
2 8 oz. cans tomato sauce
1 can cream of mushroom soup
1 8 oz cans water
1/4 lb grated cheese

Cook spaghetti in salted water until done, drain. Brown hamburger, and onion. Add garlic, soup and water, simmer. Place spaghetti in large casserole, add meat mixtire. Mix lightly. Sprinkle cheese over top. Bake at 350 for 30 minutes. Yield 10 -12 servings.
